I was reading my daily edition of the Echonet Daily and watching this You Tube and noticed the time was 1:11 pm, so I decided to upload the video and do this post.
"Jade Campbell-Scott, head chef/owner of One One One takes us through a recipe made from ingredients sourced a the local farmers market:
Spiced Pumpkin Pate with quick-pickled chilis and Nimbin Valley goats cheese".
One One One: Pumpkin PΓ’tΓ© Recipe
  • 1/2 jap pumpkin cut into wedges
  • 1 tbs hot paprika
  • Salt and pepper
  • Olive oil
  • 100mL cream
  • 5 egg yolks
Rub pumpkin with paprika, olive oil, salt and pepper.
Roast gently at 170 degrees for approx 1 hour, or until soft. Cool slightly, then scoop out the flesh, discarding the skin.
Blend with the cream and egg yolk and check the seasoning for heat and salt.
Divide into ramekins and bake in a Bain Marie at 100 degrees for about 40 minutes, or until just set.
Serve warm with pickled chillies, soft goats cheese and flat bread.

Quick pickled chillies

  •  3 long red and 3 long green chillis
  • 1/4 cup grated palm sugar
  • 1/2 cup sherry vinegar
Split and deseed the chillis, then finely julienne. Toss with salt an leave to stand.
In a pan, dissolve the sugar in the vinegar and reduce to a glaze.
Add the chillis, toss and remove from the heat. Once cooled, serve mixed with chopped parsley and mint as a hot condiment.
I think Jade and I may have gone to the same university;-)
